Sweet corn is also called sugar corn and pole corn is a variety of maize with high sugar content. There are six major types of corn. They are dent corn, flint corn, pod corn, popcorn, flour corn, and sweet corn. Corn is one of the oldest plants cultivated by mankind - according to scientists, it was introduced into the agriculture about 8700 years ago in the Balsas Valley (Mexico). Historians believe that the played an important role in the development and formation of highly-developed societies of America (May Aztec, Olmec culture), as it had become a basis for high-productive agriculture. After the discovery of the American continent by Columbus corn appeared in Europe and very soon "conquered" this part of the world. Currently corn is one of major plantings cultivated by man. The largest producers of this cereal are the USA, China, Mexico, India, Brazil, Argentina, Indonesia, South Africa, France and Italy.
Corn is one of the most popular food in the world, so no wonder its widele used in cooking. Artificial fiber, corn starch (used in the manufacture of pharmaceuticals), viscose fiber, glue, paper, explosives, as well as trimming for leather and fabric are industrially produced from corn protein. Paints, soap and rubber substitutes are btained from corn oil.
Corn stalks and leaves are used in fertilizer production, paper, packaging and building materials; and from the stalks furfural is extracted - raw material required in the production of nylon, plastics and other synthetic materials.
The use in cooking
Corn, along with wheat, barley and other grains is used in many countries for the production of bread and other bakery products. Freshly harvested ears are eaten boiled, grains may be roasted or used to make corn flakes, popcorn, or corn flour. Wholemeal flour is used for cooking corn porridge, and fine flour is added to puddings, dumplings, cakes, as well as a variety of pastries.
Sweet corn is often canned, in which case it loses some of its beneficial properties, but it significantly lengthens its shelf life. Canned corn is widely used as an ingredient for various salads, first and second courses.
